VEGETABLE QUICHE CUPS TO GO

1 pkg (10 oz) frozen chopped spinach
3/4 cup shredded reduced-fat Cheddar or Jack cheese
3/4 cup egg substitute
1/4 cup finely chopped green bell pepper
1/4 cup finely chopped onion (optional)
3 drops hot pepper sauce (optional)


Heat oven to 350 F. Spray 12-cup muffin pan with cooking spray.

Place spinach in microwaveable container and cook 2 1/2 minutes on high power. Drain excess liquid.

Combine spinach, cheese, egg substitute
, bell pepper, onion, and hot pepper sauce, if using, in large bowl. Mix well. Divide mixture evenly among muffin cups. Bake at 350F for 20 minutes or until wooden pick inserted in center comes out clean.
