1 c shortening
2/3 c sugar
3/4 tsp salt
2 tsp vanilla
exactly 1/3 c, eggs (1 or 2 depending on size)
Combine all ingredients, beat until smooth and light. stir in 3 cups
sifted flour (3 regular cups is too much - must sift.) Wrap in wax
paper and chill in fridge 2 hours our overnight 1/4 dough at a time
and roll out to about 1/4" and cut into desired cookie sizes
w/ cookie cutters. Bake at 350 for 8-10 or 12-15 min - depending on
oven - until they are just light brown.
Usually you should at least double
(or quadruple!) the batch to make it worthwhile (they go quick!)
