2 large potatoes
2 tbsp olive oil
2 tbsp lemon
1/2 tsp dried oregano
Preheat the oven to 375.
Wash potatoes and cut each into small chunks. Put into medium size
pot and cover with water. Bring to boil over high heat. Turn down
the heat to medium-low and cook covered for 10 minutes, or until they
have partly softened. Drain.
Put olive oil, lemon juice and oregano in ovenproof dish or baking
pan. Put the partly cooked potatoes in dish an mix around until completely
coated with oil mixture.
Bake uncovered for 1 hour at 375. Stir every 15 minutes so potatoes
will brown more evenly.
Serve immediately.
