COSTA RICAN POTATOES

Kathy & Christine brought back serveral delish Costa Rican dishes from their trip 2012!

Peel and cube several white potatoes and one or two sweet potatoes. Arrange in baking dish; Drizzles olive oil over and toss to coat. They use a lot of coriander; you can use rosemary,too. Sometimes they threw in some sliced red pepper. Or whatever you like, with little pepper. Bake for 45 min in a 425 oven. They will come out toasty brown and delicious.
