JERK CHICKEN

Combine vinegar, orange juice, lemon juice, olive oil, soy sauce, allspice, thyme, cayenne pepper, black pepper, sage, sugar, nutmeg and cinnamon in a large bowl. Stir well.

Chop onion and add to bowl, add garlic too. If you like really spicy food chop and slice jalapeno and add to bowl as well.

Cut chicken into small chunks. Add to bowl and stir to cover. Cover and refrigerate for at least 15 min up to 2 hours.

Preheat broiler. Move top rack to highest position just under broiling unit. Put chicken in roasting pan and place on rack in oven. Broil choice for 3-4 mincer side until completely white and just staring to turn brown.

Serve over rice. Serve immediately.
